Sumatra Masa Depan: how Japan’s roasting team crafted the 30th-anniversary flavor

Japan’s 30th-anniversary coffee blends washed and natural-process green coffee beans from Sumatra. The Japan team worked with Seattle to finalize a roasting approach that highlights a refreshing character and sweetness.

The challenges posed by two processing methods

Washed and natural-process green beans respond differently to heat. The team tested around ten approaches and repeatedly discussed the balance between operational consistency and a more expressive flavor, ultimately choosing a roast curve that accentuates the sweetness of the natural-process beans.

From origin collaboration to everyday enjoyment

The coffee uses green beans processed at the Wahana Estate, and the article presents the collaborative development process through exchanges between the roasters and producers. The finished coffee evokes the refreshing qualities of watermelon and sencha, and each purchase comes with one of three specially designed cards.
